I'm a die hard salad gal. I just love a nice, crisp, refreshing salad. The great things about salads is that they never get old because you can make them anything you want. Whether you're in the mood for a spinach salad with cranberries, gorgonzola cheese, grilled pears, walnuts, grilled chicken and balsamic vinaigrette, or a classic Caprese, there is no definitive definition of a salad. I think thats what I like, salads have NO RULES, if you call it a salad, its a salad. Sometimes I like mine jam packed with fixins, and other times I like them clean and simple. This salad is the perfect one for summer as its light and clean, and is the perfect start to your summer BBQ or outdoor dinner. The leafy greens get a bitter bite from fresh radishes which contrasts nicely with the sweet creaminess of the avocado. Add some salty parmesan and an acidic lemony vinaigrette and the whole things come together. Baddabing Baddaboom.
A Simple Green Salad with a Lemon Dijon Vinaigrette
Ingredients
4 bunches of organic Romaine lettuce
3 large radishes
2 avocados
2 generous handfuls of shaved parmesan
sprinkle of salt
sprinkle of pepper
2 tbs grainy dijon mustard, GRAIN IS GOOD all about the texture
1/3 cup olive oil
juice of 2 lemons
salt
pepper
Recipe: Tear the romaine by hand in a large bowl. Thinly slice the radishes and roughly chop the avocados. Add them into the lettuce and add the cheese along with a pinch of salt and pepper. In a small bowl, whisk all the ingredients in the vinaigrette until combined. Drizzle on the salad and toss until well coated.
