My Lunch

Today I was running short on time but wasn't willing to skimp on lunch. I ran to Magic Carpet and ordered a large garden salad with baked tofu with a mixture of balsamic vinaigrette and soy sauce and topped with toasted sesame seeds. Healthy, light, surprisingly filling from the tofu, and VERY good.

Bui's with the Boys

I'm still cart crazy, as always, and am always in the mood for a good cart fix. So Saturday morning after a late night the idea of an amazing egg sandwich from a cart was just what I wanted. My crew that morning consisted of Shein, Nick, Felman, and Tyler, and they were insistent on going to Bui's, a truck I've heard about but never ventured to. So we made the trek and it was very worth it as it was the perfect breakfast to jump start a lazy Saturday. The Bui's menu consisted of steak sandwiches, hoagies, and egg breakfast sandwiches. I had strict instructions that no matter what I ordered I must top it with Bui sauce. I went for the egg white sandwich with spinach, salt, pepper, ketchup, and Bui sauce. It only took about 5 minutes and for $3.50 I was delivered a long crusty sandwich roll topped with a steaming fried egg white, some sautéed spinach, and the infamous light orange sauce. The sandwich was great, the sauce was greater. Tangy and creamy it kind of tasted like a mix of tartar sauce and ketchup but had this little spicy kick that really made the sandwich come together.

The boys got classic bacon egg and cheeses, all which were demolished in seconds, before I could get a taste. Felman ordered a steak, bacon, egg and cheese, an interesting double meat combination, and luckily I got to taste his when he handed it to me to hold while he tied his shoe...oops. The steak was well seasoned and moist and the crispy salty bacon and the sauce worked really well together.
Felman doesn't even like eggs and he eats egg sandwiches here. In fact, this was his second egg sandwich of his life and he loved it, so if that's not selling you I don't know what will.
Here are Tyler (left) and Felman (right) enjoying their sandwiches. Felman loved his second egg sandwich of his life so much his eyes are too excited to be opened!

Cookie Monster

I'm sitting in my bed at school trying to do work and am very distracted. Why? Because I want nothing more then a really good chocolate chip cookie. Crunchy and crisp around the edges and melted and gooey and gushy chocolatey and soft in the middle. Fresh out of the oven warm with a cold glass of milk...mmm. This is my own recipe. It's taken me YEARS to perfect this and I know I have a great product. Seriously, just ask anyone who's tried them! My trick? I use a massive amount of three different types of chocolate chips which complement each other perfectly and with each bite touches a different note on your palette. So try your hand and soon you will be famous for these cookies too!

My Famous Chocolate Chip Chip Chip Cookies.

3 cups flour
1 1/2 teaspoons baking soda
1 teaspoon salt
2 sticks salted butter, room temperature, totally softened
1 cup white granulated sugar
1 1/2 cup packed light brown sugar
3 eggs, room temp
2 teaspoons vanilla
1 1/2cup bittersweet chocolate chips
1 1/2 cup white chocolate chips
1 1/2 cup semi-sweet chocolate chips

*NOTES: I like my cookies super chocolatey so I add a TON of chips...go for as few or as many as you'd like.

Recipe: Preheat oven to 350 degrees. In a bowl combine the first three dry ingredients (flour, baking soda, salt) and set aside. In another bowl cream the butter and the sugars. Beat for about 4 minutes, until well combined and light. Add eggs one at a time and continue to beat throughout the addition. Add vanilla. Beat for about 7 minutes on medium speed, until the mixture grows inside and is very fluffy and creamy. Slow down the speed and add the flour mixture in batches. Mix in chocolate chips by hand. Roll dough in seran wrap and refrigerate for at least 2 hours. Grease a baking sheet and spoon healthy heaps of dough 2 inches apart from each other, making sure not to crowd. Bake for about 12-15 minutes, until cookie edges are golden and center is barely firm.

*NOTES: Yes, it is unusual to beat for that long of a time after you add all the wet ingredients, but I find by beating it so long air gets incorporated in the dough and it makes for an airy cakey light cookie. It really does make a difference!! ALSO, don't skip the chilling of the dough step. Seriously, don't.

Fruit Frenzy

Fruit is the perfect snack. It's refreshing, healthy, cools you down, easily portable, and totally delicious. The Fruit trucks around campus are awesome. When walking to and from class and looking for a little pick me up, or coming from the gym and getting that afternoon snack, look no further then the fruit carts. Located all over campus, they're easy, quick, and have great options. You can make your own fruit salad with the fruit of your choice or get one of the mixed variety they make themselves. They also offer insanely good smoothies for that perfect morning breakfast not the go or that energy boost when you're in the need. I got a small make my own for $3.50 which also includes a banana. I was in the mood for my two favorites, pineapple and watermelon, and they certainly didn't skimp. The fruit was cold, crisp, and fresh, just the way it should be. CHECK EM OUT!
